“If you have a technique, then you can experiment as much as you like. Take a pineapple, add chili and cilantro to it and, pouring in grape seed oil, make pineapple mayonnaise. From yolks and mustard or pineapple and red onions - if there is a basis of knowledge, then everything is easy,”says the chef Vitaly Istomin.

“I would like to share with you a recipe that was included in the list of my“favorite and useful”ones. These are fluffy cottage cheese pancakes with blueberry sauce. We need: 1 pack of cottage cheese (250 g), 1 yolk, 1, 5 tablespoons of sugar, a pinch of vanillin and 1 tablespoon of premium flour. For the sauce, we need 200 g of blueberries, sugar to taste, lemon zest and 1 teaspoon of cornstarch. Stir the sugar with the yolk until the sugar is completely dissolved for 20-30 seconds, if you wish, you can replace the sugar with powdered sugar, then just stir. Then, add the rest of the ingredients besides the flour and mix until smooth. If you want to get a homogeneous and creamy mass, then you need to rub it through a sieve. Mix the premium flour and semolina in a 1 to 1 ratio. Shape the cheesecakes, roll them in this mixture and fry in vegetable oil over medium heat for 30-40 seconds on each side. Put the fried cheesecakes in the oven in a preheated oven up to 170C for 1-2 minutes. Boil Blueberries and add some sugar, lemon zest and some cornstarch to thicken the sauce. Bon Appetit!.
